Xiaozhaiba Beer Duck is one of the famous local hot pots in Xifeng. It can be spicy, sour-spicy or slightly spicy.
The main ingredients are local ducks which must be more than two years old. They are also mixed with beer, dried chili, pepper, onion, ginger and garlic. To prepare it, the chef must first wash the duck meat and cut it into pieces, and then marinate the meat with rice wine, soy sauce, salt, onion and ginger for more than 3 hours. The water is then drained and the leftover marinade saved for another recipe. The chef then puts rapeseed oil in the iron pan and heats it, frying the dried chili and pepper, adding the duck meat and a small amount of sugar and soy sauce, pouring the marinade and beer in, boiling it using a big fire, then stewing it with moderate heat until the soup is thick. To glaze it, a big fire is used.
The duck meat is delicate and tender, with a rich aroma. It can nourish organs, clear away the heat, supplement blood, nourish the stomach, strengthen the spleen, and detoxify. It is especially good for people with a weak body, physical weakness after illness, yin deficiency, dry cough and phlegm, and hectic fever.
