Jiuzhuang Sweet Corn

Sweet corn is a special snack food in Jiuzhuang Town of Xifeng, and it is also a gift that Xifeng people favor. 

The raw material is local waxy corn. After being dried, the granules of the corns are cleaned and put in a large iron pan with proportioned slaked lime and water to be cooked. The cooked corns are spread and turned them over to evaporate and cool. The length of the process depends on the weather conditions and usually takes about a week. After this, pre-prepared river sand and the corns are put into a large pot and stir fried with a moderate fire. The turner is moved at an even speed and intensity to ensure that the corns are evenly heated. After the corns are cooked, a sieve is used to separate the river sand from the corns. To make sugar into syrup, the fried corns are put into a pot and turned over quickly so that each granule is covered in syrup. They are left out to cool and then stored in a sealed container. 

The snack is sweet but not greasy, and is crisp and fragrant.
